1.杏鲍菇切成薄厚均匀的片。

2.锅中刷一层油烧热。

3.把杏鲍菇摆入锅内,中火煎制。

4.杏鲍菇在煎制的过程中会缩水,杏鲍菇片变薄变小接着在摆几片,油不够的话随时酌情添加。

5.一面煎熟后再翻一面。

小窍门&温馨提示
杏鲍菇含水分大,在煎制受热时会严重缩水,变薄变小,所以切片时要薄厚适中,如果切得太薄一煎就没了。要用中火或者中火小火来回调节着,把握好火候,不要煎糊。再煎的过程中,杏鲍菇出水,会有水油共存的时候,不用害怕,不会崩到人,油不够了随时酌情添加,勤观察。
